Candied Bacon Chocolate Chip Cookies

I was shadowing a pediatric dietitian pretty recently. Somehow we got to chatting about how people act around dietitians. I’ve noticed that since I’ve started a nutrition graduate program that people often ask me “Do you still eat this?” or “Is this okay to eat?” or they’ll say “I know I shouldn’t eat this, but…” and so on. The dietitian told me that she makes it a point to eat junk food around her friends so that they’ll know that she is not, in fact, judging anyone. And mostly to show that dietitians are people, too.

One of the first things my dietetics instructor told my class when we entered the program was “Just because you’re going to be a dietitian doesn’t mean you can’t eat your favorite foods. You can still eat chocolate!” Phew!

So just to show you that I am still human, I thought I’d share this delightfully bacon-filled recipe with you all. Imagine a delicious homemade chocolate chip cookie, fresh out of the oven…it smells like pure deliciousness, right? Now imagine that same cookie loaded up with candied bacon bits.

MIND. BLOWN.

Candied Bacon Chocolate Chip Cookies

For Bacon
  1. 1 lb. Package of bacon
  2. 1/2 Cup brown sugar
For Cookies
  1. 2 1/4 Cups flour
  2. 3/4 Cup granulated sugar
  3. 3/4 Cup brown sugar, packed
  4. 1 1/2 Tsp. vanilla extract
  5. 1 Tsp. baking soda
  6. 1 Tsp. salt
  7. 1 Cup butter (2 sticks, softened)
  8. 2 Eggs
  9. 2 Heaping cups semi-sweet chocolate chips*
Instructions
  1. Preheat oven to 325 degrees. Line a baking sheet with parchment paper. In a bowl, toss bacon and brown sugar until the bacon strips are covered. Lay each piece of bacon out flat in a single layer on the baking sheet. Lay another piece of parchment paper on top of the bacon strips, then place a baking sheet on top of the parchment. This creates a bacon and baking sheet sandwich and ensures that while the bacon cooks, it will not curl up. Place the tray into the oven for 25-30 minutes or until bacon begins to get crisp. Once cooked, allow bacon to cool for approximately 30 minutes. It will get a little crisper over time.
  2. While bacon is cooking, combine butter, vanilla, and both sugars in a bowl - beat until creamy. Add in one egg at a time, thoroughly beating the mixture after each addition. In a large bowl, combine flour, salt, and baking soda. Slowly beat the flour mixture into the wet ingredients until well combined. Fold in chocolate chips. Take candied bacon strips and cut into small pieces. Fold bacon into batter. Increase the oven temperature to 375 degrees. Line a baking sheet with a silicone baking mat (if you have one) or grease a foil-lined baking sheet. Place tablespoon-sized blobs of dough onto your sheet, 2 inches apart. Bake for 8-10 minutes, or until the edges brown. Enjoy!
Notes
  1. This recipe also tastes BOMB when you substitute in toffee chips in place of the chocolate chips. However the toffee causes the cookies to spread out further, so leave 2.5-3 inches between cookies when baking.

Bacon cookies

The hardest part about making these cookies was reigning myself in and trying not to eat the candied bacon before it went into the cookie batter. Dear lord, I think bacon may actually be crack.

Whattt! Bacon chocolate chip cookies?! Unheard of! Also, I love that the dietician does that around friends. I definitely have thought of that before 🙂

Right?! I can’t live in a world without nachos and hot wings, so glad we’re still allowed to eat “bad” foods 😉
