Carrot Cake Batter Balls – Raw, Vegan, GF

You know you have a problem when your mother starts calling you “the ball queen” in public. Perhaps we should work on a less awkward endearment, but otherwise…she’s right. I like my food shaped into balls and I cannot lie. Whenever I whip out my food processor, you can bet a new snack ball is in the making. I’ve attempted to make my own “power bars” before, but the bar shape just takes a wee bit more effort than the balls.  Plus, if I shape my food into little bite-size balls I don’t feel as bad when I eat 14 of them. But 2 power bars…food guilt. Crazy, right? So, the balls win out every time.

And when a craving for carrot cake calls, you’ve just got to answer it.

Carrot Cake Batter Balls

This raw, vegan, and gluten-free treat is the perfect, guilt-free way to satisfy a carrot cake craving - enjoy as a snack or dessert!

  1. 1 Cup carrot, shredded
  2. 2 Cups Medjool dates, pitted
  3. 1/2 Cup walnuts
  4. 1/2 Cup pecans
  5. 1 Tbsp. pure maple syrup
  6. 1 Tsp. cinnamon
  7. 1 Tsp. vanilla extract
  8. 1/8 Tsp. ground nutmeg
  9. 2 Tbsp. ground flax seeds or flax meal
  10. 1 Tbsp. chia seeds
  11. 1/4 Cup dry coconut flakes, optional
  1. Using a food processor, grate your carrots. Remove grated carrots from processor and set aside. Add the nuts to the processor and pulse until finely ground. Add dates and pulse with nuts until a chunky paste begins to form. Add in vanilla, spices, maple syrup, flax meal, and carrots and pulse until well mixed. Fold in chia seeds with a spoon. Using your hands, roll approximately a tablespoon of the batter into small balls. Pour coconut flakes into a small bowl, roll the batter balls in the coconut until fully covered. Store balls in refrigerator and enjoy!

I like to portion these guys out into little baggies and pack them in my lunch for work. I occasionally like to sneak one or two before or after a run, too…you know…as fuel 😉 And for some strange (maybe it’s magic?) reason, they seem to taste extra delicious late at night after a night of shenanigans. Must be all those nutritious ingredients 😉

Lol, yes! My mother cracks me up…as soon as she said it in my head I was like “…seriously, mom?!”…oh well 🙂
