Cilantro Lime Salad Dressing

It’s about that time of the year when the summer seems like it is just a tiny blip in the far off distance. With Christmas and New Year’s right around the corner, unpredictable weather forecasts always looming, and enough itchy sweaters in every department store to clothe the masses, maybe it’s time for a little fresh reminder of the summertime. To me, summer means relaxing beach trips, Bob Marley, and lots and lots of fresh, delicious produce. Here’s a great, slightly tangy  and totally simple salad dressing to give a try…

Cilantro Lime Salad Dressing:

1/2 cup extra virgin olive oil

1/4 cup fresh cilantro

1/4 cup lime juice
 (about 3 limes)

1 tbsp honey

3 cloves garlic, minced

1/4 tsp sea salt

1/4 tsp cayenne pepper

1/4 tsp fresh ground black pepper

Put all of the ingredients in a food processor and give it a few quick jolts of the machine until the cilantro and garlic are chopped up finely and the dressing isn’t clumpy. Refrigerate and shake container well before each use. If you prefer, you can reduce the garlic and cayenne pepper, but I like my dressing like I like my men uhh…salsa! With a little zip!

Whats great about this dressing is that you don’t have to use it on just salads! It makes a great marinade for chicken or can be used to spice up roasted vegetables. It also makes a nice dip for bread.
