Easy Clam Spaghetti and At-Home Workouts

Happy Friday! The end of the first work week of 2013 is coming to an end and I think I started it on a good note. Last night I had clams over whole wheat pasta.

And I enjoyed a side salad with mixed greens, roasted red peppers, and carrots.

I also sprinkled my salad with ground flax seed for some extra fiber and color.

I’m currently slightly obsessed with flax seed and have been sprinkling it on everything…onto yogurt, into juices, over veggies, you name it! As you can see, I bought the bag of whole seeds. I used a coffee grinder to grind the seeds down as our bodies won’t absorb the whole seeds. In fact, Simply Nicole wrote a great article on the benefits of flax seed and I suggest you all check it out!

And I have been trying to avoid the gym this week because of the influx of newbies. So Wednesday evening I did a quick pilates workout DVD and last night I did a full Zumba class on my new Wii Zumba 2 game.

Zumba for Wii was no joke! It was 45+ minutes of nonstop cardio and crazy white girl dance and by the end of it I was ready to hit the showers!

I hope you all have fantastic, fitness-filled (and relaxing) weekends! I’ll leave you with my recipe for dinner last night, enjoy!

Easy Clam Sauce:

2 6.5oz cans of minced clams

4 tbsp extra virgin olive oil

4 cloves of garlic minced (go lighter if you’re not as big of a fan)

1/8 tsp fresh ground pepper

1/2 tsp salt

Lots and LOTS of chopped parsley

Just sauté the garlic in the oil then add your clams. Do not drain the clams, put all the juice in with them. Add the remaining ingredients and heat. Serve over pasta and top with grated parmesan cheese and crushed red pepper flakes for a little kick. Simple!

Haha, I love that you did Wii Zumba. I’ve done the Kinect Just Dance before and got a crazy workout! Sometimes at-home workouts just can’t be beat!

Oh man girly, I’ve done Just Dance before and it definitely can be a sweat session too. At-home workouts are currently winning out over the crazy madhouse that is my packed gym.

That zumba workout sounds fun! I’m not always the best with at-home workouts but when I do them, I love yoga videos on Comcast demand. Also, that’s a good idea to put flax seed on a salad. I’ve never thought about doing that. I usually just sprinkle some in smoothies or oatmeal and my big bag of flax sits alone on the shelf forever! Thanks for the tip 🙂

I need to get into yoga, I’ve heard great things and besides just doing a few poses now and again haven’t really given it a try, adding it to my to-do list. Flax seed has legitimately been going into everything lately definitely try it on a salad…helps to bulk it up! 🙂

I need to get better about flax and chia seeds. I can never remember to sprinkle them! Love the clam pasta idea 🙂
