TGIF, friends! Did you have a great week? A not so great week? We have another fresh weekend ahead of us to make changes, spend time with loved ones, go outside and enjoy the changing leaves, and make the most of the Fall.
This week was full of lots of good eats! I think I officially said goodbye to summer by eating the last of my home grown tomatoes. I sliced them up, drizzled them with olive oil, sprinkled them with parmesan cheese, and topped them with onion and bacon before broiling them. It was a great side dish and you can never go wrong with bacon
I think I may have gone a whole three weeks without having sushi, do you feel bad for me? Well, have no fear! I went out for a sushi dinner this week and tried one of the sushi restaurants new dishes. It was called the tuna & salmon tower and it was delicious! It was essentially a deconstructed sushi roll with rice on the bottom, then a layer of salmon, more rice, a layer of avocado, and then a layer of tuna on top. The whole tower was drizzled with a wasabi sauce. I shared it with my dinner date and it was so big that we cut it like a cake and each ate a half. Yum! And don’t worry, we ordered plenty of other rolls too, because obviously.
Let’s just keep rollin’ with the topic of food…I had Chipotle on Wednesday night and as per its usual, it was so dang good! I feel like I cheat whenever I order my burrito bowl because I always ask them for the chicken and then make them put the grilled veggies into my bowl as well…so essentially I get away with ordering two entrees for the price of one. I know, you’re jealous. You should start doing it. And have you tried the Chipotle flavored Tabasco sauce they offer at the condiment stations? It’s spicy, smoky, and a must!
And just so you know that I do more with my life than just eat, I’ll share with you that I am still on the yoga kick! Reflexion Yoga is the website I’ve been using for guided yoga videos. I chose a 30 minute class that was supposed to help you to de-stress after a long day at work. I was expecting it to be lots of sun salutations and deep breathes…that is not exactly how it went. That video kicked my butt! I even had to take a break in the middle of it. Working up a sweat like that definitely did help me calm my nerves after a long day at work though.
