Green Smoothie Palooza – Lemon Meringue Pie

Happy Monday, friends! Hope everyone had a wonderful Easter and Passover.

I went on a serious green smoothie spree over the weekend! The kitchen was a battlefield of green spoons, spatulas, and cutting boards. Of course I decided I had to get you guys in on the fun, so I’ll be sharing my Green Smoothie Palooza with you all.

Green Smoothie Recipes

I’ll be posting a few new smoothie recipes throughout the week – all of them will be lean, mean, and very green 🙂 First up, we’ve got a lemon meringue pie green smoothie. This is a meal in a glass!

Lemon Meringue Pie Green Smoothie
Serves 1
A play on lemon meringue pie in creamy, green smoothie form.

  1. 1 6oz. Stoneyfield Organic Fat Free Lemon Blends Yogurt
  2. 1/2 Banana
  3. 1/2 Avocado
  4. 1 Handful Spinach (~ 1/2 cup)
  5. 1 Handful of Ice (~ 5 cubes)
  6. 1 Tbsp. Lemon juice
  7. 1/2 Tsp. Vanilla Extract
  8. 2 Tbsp. Chia Seeds
  9. 1 Honey Graham Cracker
  1. In a blender, pulse all ingredients except for the chia seeds and graham cracker. Once desired consistency is reached, stir in chia seeds. Pour, top with crumbled graham cracker and enjoy!
  1. I like a subtle lemon flavor, but the amount of lemon juice can be increased or decreased based on your personal preference.
  2. I used Salba Smart chia seeds and Earthbound Farm Organic spinach.

The avocado and banana make this into one seriously creamy smoothie! I recommend enjoying this with a spoon 😉 You get to drink and eat your greens all in one! Plus you get an extra fiber and omega 3 punch from the spinach and chia.

Favorite green to use in smoothies? Spinach, it’s so subtle. 
What’s your favorite flavor of pie? I’m going coconut cream or pecan.

Spinach in smoothies is the best because you can’t taste it! I have yet to try avocado in a smoothie, I’ll be trying this for sure! Happy Monday pretty lady!

I still need to try adding avocado to my smoothies!! I tried Edamame haha yeah it was no good. But this smoothie looks and sounds super good!

I LOVE GREEN SMOOTHIES! We’ve been out-of-town for the past 5 days, and I actually miss my blender because that’s what helps me concoct these delicious, nutritious drinks. I tend to use romaine, kale, spinach, or mixed baby greens in my smoothie. I make a big batch of my version of the ‘glowing green smoothie’ every few days for the hubs and I (yes, he loves it, too). Looking forward to seeing more of your creations!

Spinach is my favorite smoothie ingredient too. I’ve never used avocado and am mad at myself for not thinking of it yet!
