Holy Guacamole!

Everyone always needs a quick go-t0 party dish that they can whip up fast so that they can still have plenty of time to primp for the party. This is just the trick, a super easy guacamole that guests will love…they may even think it is divine (get it?).  Here’s What you’ll need:

Holy Guacamole:

2 avocados

1 medium onion

3 medium tomatoes

1 tbsp taco sauce (the secret ingredient!)

1/2 lemon or lime

Salt and pepper to taste

Cilantro to taste (optional)


When choosing your avocados, go for ones that are a happy medium between really hard and very mushy. Cut the avocados in half and remove the pit. Using a spoon, scoop out the avocado guts and put them into a bowl. Use a fork to mash up the avocado, leave a few pieces of avocado in small chunks for texture. Then chop up your tomato and onion. It’s up to you as to how small or big you’d like your onion and tomato to be. I usually like to chop the onion more finely than the tomato so you don’t get too much of an overwhelming onion taste in each bite. I also recommend removing the seeds from the tomato, it will help to make your guacamole less watery. Then throw the pieces in with the guacmole and fold them into the mushy goodness. Now add your taco sauce and lemon or lime juice. I’ve used both fruits before and either way it comes out great. Top it off with lots of fresh ground pepper and salt. The salt in this dish really helps to bring out the flavors, so you may want to go a littler heavier with the salt than you would in other dishes. If you’re a cilantro fan, go ahead and sprinkle some fresh cilantro leaves in there as well. Then cover and refridgerate until the party!

As a sidenote: avocados oxidize relatively quickly (go from vibrant green to dull green/brown), so while the citrus in this dish will help the avocados to keep their coloring, if you’re going for a spectacular presentation you may want this to be the last thing you make before you rush out the door or the guests start knocking.

Great post! I love your Christmas sweater too! As far as dishes to bring to parties, I’d say I love bringing the dessert! 🙂
