Krazy Simple Kale Chips

This past Friday it snowed where I live, and even though it was only about 2 inches of snow, the roads were ridiculously treacherous! On my drive home from the train station, I was giving myself pep talks in the car “you’re doing great” and “keep going, only a little further, just take it slow” and even “dear God please don’t let me crash.” Yes I went there. It was definitely up there with being some of the worst weather I’ve had to drive in. Even worse than the time my car broke down on a highway during a hurricane. Ugh! So needless to say my plans of going grocery shopping Friday night for some fun food were put on hold. I was stuck in the house with frozen pot stickers and a head of kale. So I made myself the chicken pot stickers and these kale chips for dinner:

Krazy Simple Kale Chips:

5-6 leaves of kale

1 tbsp olive oil

3 tsp. cumin

fresh ground pepper

sprinkle of garlic powder

Line a baking sheet with aluminum foil. Massage the kale leaves, chop them up, and spread them out over the baking sheet.

I excluded the kale stems and only used the leaves. If you have a juicer, you can totally save the stems and use them in your next juice. Drizzle olive oil over the kale and use a spatula to flip the kale around to make sure they’re lightly coated with the oil. Β Then sprinkle on your cumin, pepper, and garlic powder. Place in an oven at 350 degrees for about 20 minutes or until flakey and crispy.

You could eat the chips as a side to a sandwich or you could add them into a panini or even grind them up in your hand and sprinkle the flakes on top of a salad or soup.

I just ate them plain with a side glass of cabernet πŸ™‚

  • High in fiber, it can help reduce blood cholesterol levels and your risk of heart disease, especially when kale is cooked

I just posted something asking for Kale recipes because I have a joint injury that I’m trying to get rid of and Kale is supposed to be good for that πŸ™‚ Does it matter what kind of Kale you use for these?

I used curly kale but I’m sure you could use any kind you’d like πŸ™‚ Also,I hope your joint injury heals up quickly!!!

Driving home in snowy weather is not fun. Fortunately my boss let me leave early Friday, so I was able to get home before things got really bad. My car does not like snow.

That’s awesome you got to high tail it out of work early! My car pretty much doesn’t like anything but 70 degrees and sunny.

Love kale chips! I actually only cooked mine for 10 minutes or so but I think my oven is unusually hot. Good idea on throwing the kale stems into a drink!

Driving in bad winter weather is soooo scary!! Slipping/sliding out there is terrifying. I’m glad you’re OK!

I tried kale chips over the Christmas holidays (my friend made them) and I didn’t mind them, but i think it’ll take awhile for them to grow on me!

Yeah, I mean they have nothing on potato chips, but at least you still get the bite-sized crunch! And it’s so much healthier. Good for you for being brave and trying a funky new food πŸ™‚

my kale chips never turn out right πŸ™ My cheat was a Red Robin Bonzai burger with sweet potato fries. TOTALLY worth it!

Well… you could always make sweet Potato chips instead? Not quite as healthful as kale but I bet they’d taste good with just about anything on them. I have faith in you kale chip making abilities πŸ™‚

I will be honest and say that I don’t exactly love kale but I recognize that it has so many health benefits that I need to incorporate it into my diet. Good for you for loving it! πŸ™‚

This crappy weather is definitely getting old…
