I do not know what has gotten into me lately, but I think I have been bitten with the fashion bug! I just cannot satisfy my need for new clothing and accessories. And believe me, I do not have a budget to just buy, buy, buy. That’s why I have been hitting up Etsy and the outlets to try and tame the beast in me that wants to shop their brains out without breaking the bank. I was really excited to go to the J. Crew outlet because I had my mind set on purchasing a few statement necklaces. Well, that just did not happen. When I looked at the price tags for the jewelry, each necklace was upwards of $50. Now don’t get me wrong, I’m sure the quality was great, but I am not going to spend $70 on an orange bauble costume jewelry necklace. And that was the outlet price! Ain’t gonna happen. But my quest for statement jewelry was not stifled, and lucky for me, I found a much more affordable option in the form of the website Brina Box.
I stumbled upon the website by reading a few fashion blogs and seeing that many times the accessories that the bloggers were rockin’ in their “OOTD” came from Brina Box. I quickly scoured the site and filled up my cart with pieces I needed to have. The website offers a lot of J.Crew inspired pieces without the J.Crew price tag…sold. Most of the items cost around $15 to $30 each. Here are the necklaces I purchased:
I am in LOVE with the pieces. I’ve worn the coral necklace pretty much nonstop since I’ve received it. And have big plans for the blue necklace in the future. Right now the site is doing a “grab bag” deal where you spend $35 and get $80 worth of jewelry. The catch of course is that you don’t know which pieces you will get. I’m just going to say right now that I am having a really difficult time not splurging on this right this moment. I wouldn’t be completely surprised if this mixed bag deal ended up in my future Friday favorites. Well, I’m glad I got that off my chest!
Another new thing in my life is winter squash. In the CSA last week, I received a pretty big pumpkin-looking squash. What the heck was I going to do with it? Roast it, of course! Got a new veggie and you don’t know how to use it? The answer is always to roast it. You just can’t go wrong.
Sweet & Salty Roasted Winter Squash:
1 medium-sized winter swuash (for lack of a better comparison…it’s about the size of a human head)
1/3 cup melted coconut oil
1 tsp Kosher salt
1/4 cup brown sugar
Sprinkle of cinnamon
Preheat your oven to 400 degrees. Carefully cut the squash in half and remove all the seeds with a spoon. Cut the squash into half inch wide slices. Line a baking tray with tin foil, and place your slices of squash onto the pan in a single layer. Drizzle your coconut oil over each of the slices. Sprinkle with the salt and cinnamon. Roast the squash for 15 minutes, then remove from the oven, flip the slices over and cover them in more cinnamon and put back in the oven for an additional 15 minutes. When 3 minutes remains on your oven timer, remove the squash, sprinkle the brown sugar on top of each slice and put the tray back into the oven for the remaining time. This will allow the brown sugar to caramelize. Remove squash, let cool, and serve!
This ended up being delicious straight out of the oven as a snack; and I saved a bunch of slices to heat up as a side for dinner the next night. I find it funny that I tried winter squash during the summer for the first time, and it tasted liked fall 🙂 I’d say it tasted like a cross between pumpkin and kabocha squash.
