Peanut Butter Pizazz Cookies

Two cookie recipes in one week? I’m not even sure who I am anymore. Me…baking?! I know, it seems crazy, but let’s not question it because today I am going to share with you the easiest recipe for a peanut butter cookie ever. We’re talking an intense peanut buttery taste. Like, if I knew of a girlfriend going through a rough breakup, I’d bring her these cookies instead of a pint of Ben & Jerry’s. Yes, they are that indulgent. Bonus: there are only 4 ingredients! It cannot get any simpler, people.

Ingredients
  1. 1 Cup Peanut Butter
  2. 1 Cup Sugar
  3. 1 Egg
  4. 1 Tsp. Baking Soda
Instructions
  1. Preheat oven to 350 degrees. In a mixing bowl, beat peanut butter and sugar with an electric mixer until well combined. In a separate bowl, whisk your egg and then add it into the mixer with your baking soda. Beat all ingredients together. Roll small balls of dough in your hands and then place on a greased baking sheet. Use a fork to create a criss-cross pattern on top of each cookie. Bake for 10 minutes or until golden brown. Enjoy!
Notes
  1. I used smooth peanut butter, but crunchy would work fine too.

If you’re looking to lighten up this recipe, you could use almond butter in place of peanut butter, remove the yolk from the egg, and use a different sweetener. I think if I alter the recipe at all, I’ll try it with cookie butter in place of peanut butter next time. #cookiebutterobsessed 

Peanut Butter Cookies

These cookies are very reminiscent of my peanut butter and sugar sandwich days. I think I’ve shared with you guys before that when I was really little I would wake up at 5am on Saturday and Sunday mornings. Before my parents would wake up, I’d go to the kitchen and make peanut butter and sugar sandwiches to tide myself over until breakfast. Nothing like a sugar-crazed 4-year-old on a weekend morning. Sorry, parents.

Can never have enough peanut butter. I have made these before and they are terrific, I have also done it with chocolate chips.

Nothing beats a simple peanut butter cookie recipe. To answer your question – of course i’m a nut butter fan. I eat it daily.. like right now w/ carrots =)

Hahahaha I was just thinking about using cookie butter instead of peanut butter. That stuff wins every time! I love almond butter, but there is something about peanut butter cookies. Whether I like it or not, they are always the best cookie out there to me!

Peanut butter cookies are my fave! Isn’t it amazing how easy it is to make PB cookies? I bet using AB in place of the PB would be super tasty, too!

I’m such a peanut butter fanatic, as is my husband, so we’d devour these cookies in like 2 seconds! 😉 They sound awesome and I love that they only have a few simple ingredients.

I love this recipe! So simple!!! Cookie butter has my heart as far as nut butters go, but really I’d eat them all!
