Pineapple Bread Stuffing That Will Have You Stuffing Your Face and GIVEAWAY Winners!

by Her Happy Balance on April 3, 2013

This will not be the healthiest recipe you ever make, but it may very well be the easiest. In fact, you are just 6 teeny, tiny ingredients away from impressing the pants off your dinner guests. AND you may actually already have all the necessary ingredients on hand, double win!Β I made this for Christmas dinner this year, and it went over really well. And my mom made it last weekend for Easter. It’s a family fave…mostly because making it gives us an excuse to have dessert at dinnertime.

Pineapple Bread Stuffing:

8 eggs, beaten

10 slices of bread diced into 1″ cubes (I used an italian bread, but wheat would be healthier)

2 cups sugar

1 cup butter, melted (Yeah…this is gonna be Paula Deen good)

2 20 oz cans of crushed pineapple, drained

Cinnamon to sprinkle on top

Mix all ingredients together, put into a greased casserole dish and bake for 1 hour at 350 degrees. And voila! Supposedly this serves 10 people…ha! I’d save this recipe for a medium sized dinner party or a hungry family (maybe 6-8 Β people).

Ate too much, feeling a little guilty? Well, don’t. But here’s a great ab exercise to do after you’re done digesting all the pineapple goodness.

I absolutely adore pineapple, so this stuffing sounds amazing! Thanks for sharing :).

Her Happy Balance April 3, 2013 at 2:02 pm

Sure thing! πŸ™‚ I’m a big pineapple fan as well! (clearly haha)

maureenbreakingfree April 3, 2013 at 8:27 am

I’m trying to find a way to get over my food guilt (slowly but surely!). In theory, I’m all about everything in moderation πŸ˜‰ haha

Her Happy Balance April 3, 2013 at 2:03 pm

I hear ya! I definitely feel guilty when I eat something really fatty. It’s okay though, we can make up for it in healthier foods next time πŸ˜‰

cookingfortheotherhalf April 3, 2013 at 8:46 am

Omg I love pineapple, so that bread stuffing looks awesome! I definitely need to try it.

Her Happy Balance April 3, 2013 at 2:03 pm

Thanks, lady! Let me know if you try it! πŸ™‚

megbek April 3, 2013 at 8:46 am

YAY WE WON! Thank you!!!! πŸ™‚ I am SO excited and will definitely post about how delicious these are when I get them! My favorite side dish is Brussels sprouts (only if they’re delicious, AKA, not steamed). It’s all about moderation! Everyone needs a treat every once in a while. This looks delicious.

Her Happy Balance April 3, 2013 at 2:04 pm

Yes everyone does need a treat! And congrats πŸ™‚ I hope you love them. I haven’t had the chance to try this flavor so you’ll have to let me know how they are!

chasingchels April 3, 2013 at 8:51 am

Mm fav comfort food lasagne, grilled cheese/tomato soup, my dad’s stuffing, or mac and cheese πŸ™‚ as far as sides go, i’m a fan of the sweet potato and everything you can do with it!

Her Happy Balance April 3, 2013 at 2:04 pm

ALL of those comfort foods sounds pretty fab! Grilled cheese is so underrated. Sometimes it’s the cure for a bad day πŸ™‚

Alex @ Cookie Dough Katzen April 3, 2013 at 9:34 am

Dessert at dinner time is the best. One of my favorite sides (which I get once a year and probably with good reason!) is sweet potato casserole. So good and so sweet!

Her Happy Balance April 3, 2013 at 2:05 pm

Thanksgiving sides! SO delicious! I don’t blame ya πŸ˜‰

blonde hair blue eyed runner April 3, 2013 at 9:56 am

I’m not a big warm pineapple fan, weird I know. My sister is though and she’ll love this recipe!!

Her Happy Balance April 3, 2013 at 2:06 pm

That’s alright, we can still be friends πŸ™‚ haha Let me know if your sis gives it a go!

thedancingrunner April 3, 2013 at 10:35 am

Definitely a believer in moderation! Live well, eat well and enjoy life!

Her Happy Balance April 3, 2013 at 2:06 pm

Exactly, ENJOY life! Sometimes that means going back for seconds πŸ˜‰

The Cookie ChRUNicles April 3, 2013 at 10:57 am

I definitely believe in moderation! Although I always gravitate towards clean meals and the comfort food in the form of dessert! I love Thanksgiving for the side dishes, can never get enough sweet potatoes, stuffing, corn casseroles!

Her Happy Balance April 3, 2013 at 2:07 pm

Thanksgiving is on a whole other level, best meal ever? I think yes.

Nori S April 3, 2013 at 11:12 am

Mmmmm! I love pineapple in all forms, and this sounds so yummy!

Yay! I won! And sent an email.

My favorite comfort food is mac and cheese, made with Velveeta.
My favorite side dish is grilled zuchinni. I could eat it every day.
Everything in moderation!

Her Happy Balance April 3, 2013 at 2:07 pm

I love grilled zucchini in the summertime, good choice! And congrats! I hope you love them πŸ™‚ I’ll be sending them out soon!

Brittany April 3, 2013 at 11:16 am

All things in moderation for sure, but with sweets I don’t know what moderation is hahaha. Those bicycle kicks will come in handy for me!

Her Happy Balance April 3, 2013 at 2:09 pm

I did the bicycle crunches/kicks on Monday after not working out my core for a little while and boy do I feel them, still! There’s a whole different scale for moderation when it comes to sweets πŸ˜‰

Tina@GottaRunNow April 3, 2013 at 1:55 pm

Is oatmeal a comfort food? Well, it is for me on cold mornings! I especially like it topped with apples, raisins and cinnamon.

Her Happy Balance April 3, 2013 at 2:09 pm

Oatmeal can totally be a comfort food! Apples and cinnamon sound like great toppings, especially if you warm up the apples. Yum, baked apples!

Becky @ Olives n Wine April 3, 2013 at 2:34 pm

I love fruit-flavored stuffings! I’ll have to try yours the next time I have a family dinner. And I have stopped making myself feel guilty about enjoying a heavy meal – all in moderation!

Her Happy Balance April 4, 2013 at 7:52 am

I totally agree with you. I don’t want to feel like I’m denying myself of anything, so having a serving of something creamy and delicious (helloooo pasta alfredo) is okay every once in a while πŸ™‚

jumpeatrun April 3, 2013 at 2:38 pm

OMG- that bread sounds soooo good! I just started training for a crazy 15 mile trail race in super high elevation, so those carbs and calories are totally justifiable, right?

Her Happy Balance April 4, 2013 at 7:53 am

Ooo so exciting! I can’t wait to hear about the race. And carbs are totally acceptable…they’re 100% necessary in your case πŸ™‚

mirandabutts April 3, 2013 at 3:41 pm

I love Pineapple! My brother and I tend to get Hawaiian pizza with lots of Pineapple! The bread sounds so good! I had a cake one time that had pineapple and mango mixed into the batter. TO DIE FOR!
Thanks for sharing!

Her Happy Balance April 4, 2013 at 7:54 am

Yum, I don’t order it very often, but every once in a while I crave Hawaiian pizza too! And I’m very jealous of your mango/pineapple cake extravaganza! Thanks for stopping by πŸ™‚

Meredith April 3, 2013 at 6:43 pm

WOW this looks good. I will absolutely be trying this! My favorite comfort foods tend to be pasta dishes, or brownies and things for dessert. I am a firm believer in ‘all in moderation!’ I think my favorite side dish would have to be anything with sweet potatoes!

Her Happy Balance April 4, 2013 at 7:57 am

I am a big pasta fan, too. Nothing says comfort like pasta tossed in a rich cream sauce πŸ™‚ I’m a newbie to the world of sweet potatoes (as in I ate them for the first time like a year ago) but I really enjoy them!

Kristina at damntenpounds April 3, 2013 at 11:37 pm

LOL at “Paula Dean good.” This looks tasty and worth the splurge though. I run enough to not feel guilty after eating a total sugar bomb. My favorite comfort food is Kraft Mac n’ cheese… the nasty, fluorescent, chemical filled blue box of love. It’s so bad for you, but once a year, I go to town πŸ™‚

Her Happy Balance April 4, 2013 at 7:57 am

Oh man, there’s just something about the neon orange powdered cheese that speaks to me and my palette haha! I don’t blame ya πŸ˜‰

Stephanie@nowiun.com April 4, 2013 at 12:07 am

I try to work in moderation. Even a couple of bites of something is satisfying and you can be free of any nasty overeating feelings.

Her Happy Balance April 4, 2013 at 7:58 am

True! if you let yourself at least have a taste of something decadent, you don’t feel like you’ve denied yourself of it. It’s too bad my “taste” turns into the whole thing πŸ˜‰
