Pinterest Inspired Food-Prepped Lunches!

by Her Happy Balance on May 21, 2013

It is plain to see that mason jars are taking the world by storm. Photos of smoothies/sangria/oats in mason jars have been blowing up my Instagram for the last couple of months. Well, I have had enough of admiring, I want in on the mason jar action! And to think, mason jars are what my great-grandmother used to preserve her jams and pickled veggies back in the day. Great grandma was so hip!

I am a Pinterest newbie, but I have already pinned one mason jar idea that I just had to try πŸ™‚ I am a big fan of bringing my own lunch to work. It saves me money and allows me to pack healthier options. Enter the Pinterest-inspired mason jar salad…

Mason Jar salads

It was super easy to put these bad boys together! I just hit up the grocery store for all my salad supplies and went to work. I went for a Mexican themed salad and varied the dressings to give each salad a unique flavor. What’s important to remember is how you layer your toppings – dressing is always on the bottom, followed by your protein, then your veggies. I actually went to town on the toppings and couldn’t fit any lettuce into the top of my jar…oops πŸ™‚ Can’t mess with a girl and her toppings! But if you were following the Pinterest idea completely, you would save your lettuce for the very top so it wouldn’t wilt. I had a separate container for lettuce and a little baggy of cheese to use as a final touch on topping this salad. I think after making this monster salad, you all can agree that I have the capability of making one heck of a sundae too (the toppings are the best part)! I am available for salad-making parties as well as ice cream socials. I know there is such a high demand for those types of parties…

I love that idea! Thanks for sharing!

Her Happy Balance May 21, 2013 at 8:44 am

Sure thing, Alyssa! It was so nice that the veggies didn’t get soggy or anything πŸ™‚

Meghan @ fitnesscrEATures May 21, 2013 at 9:44 am

How. Freaking. Adorable.
I absolutely love your picture of your mason jar salad (toppings). Seriously – so cute Leslee!!! Those toppings are all so wonderful and they look so yummy. Add a mason jar and you’ve got the most sought after lunch in the workplace! Some people in my office are all about those mason jar salads and I have yet to get with the times. It’s so handy and exciting though!
Further proof we are twinsies – my salad today: corn, black beans, cucumbers, carrots, and a few other things, but basically, we are the same. Get outta my head and then come back immediately! πŸ™‚
I love putting chickpeas on my salad, along with feta (and I know how much you love feta!). As far as pinterest goes, I’m all about any sort of decadent dessert available, hence all my indulgent pins in my food pin section (board?). Who knows. All this social media is too much. I can handle Instagram and barely Facebook. Oh yeah, and a little blog. Have a fab work day gorgeous twinny!
Oh, and finally remembered to tell you!!!!!!
Confession – sometimes I get the math wrong when I hit submit. Ugh. Shameful.

Her Happy Balance May 21, 2013 at 3:04 pm

“Get outta my head and then come back immediately” LOL! We really are twins, I love it πŸ™‚ Chickpeas and feta for the win! I don’t know why, but I never grew up eating chickpeas so I never think to include them in things. But I love falafel and hummus so I should get on that! I’ve been such a Pinterest slacker, I need to check out all your boards! Actually, considering we have such similar taste, can I just re-pin everything you already have and pretend like I was the one who found it? You cool with that? I’m kidding, I’ll only take 3/4 of your pins. And believe you, me I am sure you are WAY ahead of me on the social media savviness. What is computer? It still takes me a billion years to convert things to pdf’s and send them via email. Turtle tech status.

Anywho, your confession made me laugh! I am AWFUL at math. I put the math problem in because I was getting spammed like crazyyy! I was fed up and now subject you to multiplication. Every once in a while I look at the problems and I think…wow, they included 7×6? Tough stuff! πŸ˜›

I did the mason jar salad and LOVED it! I just ate it right out of my mason jar πŸ˜‰ Well, I actually used a washed pickle jar because I had it in my house, but it was the same idea. I think that mason jars make everything better πŸ˜‰

My favorite salad topping is cottage cheese. I usually use it in place of dressing. I actually just love cottage cheese in general. BUT I have fallen in love with Bolthouse Farms yogurt dressings. Oh. My. Goodness. Low-cal without the scary ingredients. YES PLEASE!

Her Happy Balance May 21, 2013 at 3:05 pm

First of all, we are two peas in a pod! I LOVE cottage cheese and bring it to work almost everyday and people think it’s gross but it’s delicious!!! So high five for that! And now I most certainly need to check out these dressings you speak of, yum!

Chelsea @ LittleOneRuns May 21, 2013 at 10:05 am

This is too cool of an idea!! I love putting mushrooms, olives, jalapeno peppers (pickled of course), pickles, really anything I can get my hands on lol. Eh, I am horrible at pinterest lol I never go on too often anymore….

Her Happy Balance May 21, 2013 at 3:07 pm

I am super untrendy and just discovered Pinterest like a month ago lol so I still really enjoy it. And jalapeΓ±os are a great topping! I need to buy myself a jar πŸ™‚

Jess @ JessieBear What Will You Wear? May 21, 2013 at 10:16 am

God I love pinterest :). And your salad dressing does sound amazing.

Her Happy Balance May 21, 2013 at 3:08 pm

Hannah @ CleanEatingVeggieGirl May 21, 2013 at 10:45 am

What an awesome idea!! I SO need to give these a try!

Her Happy Balance May 21, 2013 at 3:17 pm

It was great for keeping all the veggies crisp, I can’t stand when everything gets all soggy, belch!

meredith May 21, 2013 at 11:28 am

I love pinterest. It used to keep me quite occupied at work lol. When it first came out, it took me some time figuring it all out but once I did, I was hooked. I love boards filled with recipes. I have seen the salad jars for a while and considered prepping them for when I was working but never did it. They remind me of the whole foods salad containers where it keeps your dressing from making everything soggy. I eat salad basically every day for lunch and always include some form of a roasted vegetable mix, , avocado, rice/quinoa/roasted sweet potato combo (sometimes fruit thrown in too) – I dont really use dressing, I opt for peach salsa, BBQ sauce or even just the flavors of everything combined is delicious enough for me.

Her Happy Balance May 21, 2013 at 3:19 pm

I bought some avocados that I wanted to use in these salads, but they just weren’t ripe enough yet. Guess that means guacamole for me this weekend πŸ˜‰ Love the idea of adding quinoa to a salad, I never think to use that but it’s a good one. Pinterest is pretty great, I’ll have to check out your boards πŸ™‚

Becky @ Olives n Wine May 21, 2013 at 11:51 am

Your shrimp salad looks amazing! I haven’t hopped on the mason jar train yet… I don’t have enough room to keep them once they are empty! I really want to make a framed necklace holder that was floating around Pinterest a year or so ago – we’ll see if it actually happens πŸ™‚

Her Happy Balance May 21, 2013 at 3:20 pm

You raise a really good point, I actually have no place to store the jars. They were an impulse buy and now they are sitting on my kitchen table…most of them still in the package lol! A framed necklace holder sounds fun, you’ll have to post pictures if you ever get around to it πŸ˜‰

Lindsay @ The Functional Foodie May 21, 2013 at 12:00 pm

I totally want to get into using mason jars to bring my food to class and work. I taught a class on spring vegetables to a bunch of children a month ago and we shared a pinterest cartoon about how to build a salad in a mason jar. It was super cute. I have so many things on pinterest that I want to do. I need to have a pinterest day at least once a week, so I can get some crafting and cooking done.

Her Happy Balance May 21, 2013 at 3:22 pm

Teaching a bunch of kids about Spring veggies is potentially the cutest thing ever! Such a great idea to look to Pinterest for inspiration πŸ™‚ And I’m with you, I need time just to make all the recipes I’ve bookmarked!

Brittany May 21, 2013 at 12:09 pm

My main use for Mason jars are for my water. I bring one with me everywhere I go, and have done so for at least 6 years haha. I do love storing leftovers in them too though! I am not a plastic container user!

Her Happy Balance May 21, 2013 at 3:23 pm

You were trendy, before mason jars were trendy. So I think that makes you an uber hipster πŸ™‚ I like the idea of keeping your water in the glass jar, because then you don’t have that bad plastic or metal taste.

Jessie May 21, 2013 at 11:27 pm

I’ll use mason jars for my lattes, and sometimes yogurt messes.

Lately, my favorite salad topping has been apples πŸ™‚

Her Happy Balance May 22, 2013 at 12:33 pm

Apples in a salad sounds really refreshing! I’ve been meaning to start putting strawberries in mine.

Meredith May 21, 2013 at 11:28 pm

These look amazing, great idea, I’m so glad you shared it! My favorite salad toppers are berries, cashews/almonds, bread and butter pickles, and feta cheese. I like the idea of an icecream social party, you’d be first on my invite list ; -)

Her Happy Balance May 22, 2013 at 12:34 pm

We’ll be ice cream social VIPS with chocolate sauce bottle service πŸ˜‰ And I am with you on the cashews, they have to be my favorite nut.

Katherine May 23, 2013 at 10:08 am

Don’t you just love Pinterest? It makes me want to create adorable little lunches in mason jars that look so fancy. I think I’m in love with mason jars! That Mexican themed salad sounds killer too! Happy Thursday! xx

Her Happy Balance May 23, 2013 at 10:30 am

Hi Katherine! Thanks for stopping by πŸ™‚ Mason jars just seem to make everything look more creative, right? πŸ™‚ Have a wonderful Thursday!!
