Dare Crackers

Happy Thursday, folks! Today I have got a great post for all of my foodie friends out there. If you follow me on Instagram, then you saw I recently graduated from Drexel University with my MS in Human Nutrition. The tassel was definitely worth the hassle, but it felt like a very long and busy two years working towards it! I knew I wanted to celebrate this accomplishment. Considering the lovely summer weather we have been having in Philadelphia, a backyard BBQ felt just right for the occasion. While most of the food was taken care of by family, I knew I wanted to contribute a little to the festivities. I opted for a simple spiced cream cheese and smoked salmon appetizer served atop Dare Crackers for the perfect amount of crunch.

Spiced Cheese & Lox Crackers
An easy-to-make yet elegant smoked salmon appetizer or snack that is perfect for summertime entertaining.

Ingredients
  1. 1 8 Oz package of cream cheese
  2. 1/4 Cup horseradish*
  3. 1/4 lb. Nova Scotia lox
  4. 1/2 Sleeve of Dare Crackers
  5. 1 Small handful fresh chives, chopped
  6. Cracked black pepper, to taste
Instructions
  1. Combine cream cheese and horseradish in a food processor and pulse until well combined. Spread the cheese mixture on top of Dare Crackers. Use kitchen shears to cut the lox into two inch long pieces and place one piece on top of each cracker. Top with a sprinkle of chives and cracked black pepper. Enjoy right away or refrigerate until served.
Notes
  1. *If you prefer a milder taste, start with 1/8 cup horseradish and add in more horseradish a 1/2 Tbsp. at a time until desired spice level is reached.

These appetizer crackers are great for summer because none of the preparation steps require using your oven! Ain’t nobody got time for a hot oven on humid, summer days. And the recipe is so simple with minimal ingredients that you can whip it up for an impromptu gathering. But the Nova Scotia salmon helps elevate the snack and makes your easy-to-make hor d’oeuvre look fancy. Add in some crispy and buttery Dare Crackers and you’ve got yourself some delicious noms.

I was hoping for leftovers to enjoy later, but my tray of goodies disappeared fast! I can see these little snacks being on repeat all summer long. Next time I will just have to double the recipe so I can hoard a bunch away for myself. #SorryNotSorry

Random Pro Tip: if you plant chives in your herb garden, they will come back year after year. I think I planted my little chive plant about five years ago and it has turned into a bush! So I already have this ingredient on hand for my next batch of crunchy, cracker treats.
