Spicy Carrot Dip

I think it’s officially true, the fall is slowly creeping up on us. With the passing of Labor day came the unofficial end to summer. #whomp Don’t get me wrong, I love the fall. I mean, who doesn’t want to wear scarves and boots and big cozy sweaters?! The leaves get all crunchy and turn beautiful shades of orange and red. Pumpkin spiced everything is sold by the droves. But while everyone is fawning over pumpkin, all the root veggies like turnips, parsnips, and carrots are forgotten. Hearty root veggies deserve just as much consideration this fall! And I’m hoping carrots can make it into your heart and onto your tables with my spicy carrot dip…

Spicy Carrot Dip
A delicious and rustic carrot dip with flavors of cilantro and cumin that's perfect for eating with toasted pita or veggies.

Ingredients
  1. 2 lbs. Carrots, peeled
  2. 3 Cloves garlic, peeled and minced
  3. 1/4 Cup cilantro, roughly chopped
  4. 1/4 Cup olive oil
  5. 3 Tbsp. red wine vinegar
  6. 1 and 1/2 Tsp. paprika
  7. 1 and 1/2 Tsp. cumin
  8. 1 Tsp. ground coriander
  9. 1/2 Tsp. cayenne pepper
  10. Salt & pepper to taste
Instructions
  1. Cut carrots into small chunks and steam in a large pot with salted water at a high heat until cooked through. Transfer carrots to a large bowl and mash them with a potato masher. Add in remaining ingredients and stir until well combined. Serve warm or cold, enjoy!

carrot dipI served it with some toasted baguette slices, FSTG rice crackers, and cucumber wedges. It makes a good mayonnaise or hummus substitute on a sandwich as the spread. And it it hearty enough that it could be served as a warm salad to accompany an entree.

However you decide to serve it, just know that it’s super simple to make and would make good ol’ Bugs Bunny proud 😉

I love carrots! They are so perfectly fall-ish. I love having glazed carrots at Thanksgiving. This dip looks so good. I would probably just eat it with a spoon haha
